Composition of Phenolic Compounds of Some Rhododendron Honeys

Viewed : 1615 - Downloaded : 675 Rhododendron honey produced from the Rhododendron flowers, especially is range in the coastal areas of the Black Sea Region. It is known as a mad honey in public and local people. It contains highly active toxins, which are called grayanotoxins (GTXs), and they can cause a wide spectrum of toxication symptoms. The toxic effect is most evident by the symptoms of hypotension and bradycardia. However, it is known that these honeys contain phenolic compounds, which are important agents of secondary metabolites. Phenolic compounds are especially biologically responsible compounds such as antioxidants and antimicrobials. In this present study, it was designed to identify phenolic compounds in the rhododendron honeys provided from the different cities of Black Sea Region. For this purpose, qualitative and quantitative analysis of 17 phenolic compounds was performed by RP-HPLC-DAD. According to the current analysis result, in all honey samples, the p-OH benzoic acid (2,351-18,992 μg (Phenolic Component)/g sample) was determined and evaluated as the major component according to the existing standards.
